Avocado Toast à la Cafe Gitane

One of my favorite spots in NYC is Cafe Gitane (both locations are great). If you're able to go, be sure to try the avocado toast. It's a very simple dish but is a great start to the day. Luckily, it's also easy to replicate at home.

Start with two ripe avocados (the ones I used here weren't quite ripe enough). Scoop them out into a bowl. Add some salt, pepper, and a splash of olive oil. Squeeze the juice of half of a lemon in. Then mash up the avocado with a fork until you get a nice, chunky mixture.

This is the important part: toast up some thick, hearty bread. Anything you can get at the supermarket probably won't work. The slices need to be about 3/4 of an inch thick. This time I used multi-grain bread from All Good Bakers and it was perfect.

Spread the avocado mash liberally onto your toast (don't be parsimonious here, two avocados should be just enough for about four slices of toast). Take the other half of your lemon and squeeze out some juice over the toast. Top with crushed red pepper (another part that should not be skipped). Enjoy!
